Leek & Sweet Potato Soup

Ingredients

Large
Sweet Potato
, diced

Medium
Leeks
, chopped (be sure to use all the green parts!)
1
Low Sodium Vegetable Stock Cube
600ml
Boiling Water
3 tbsp
Sunflower Oil
Black Pepper
to taste
Method
Heat 3 tablespoons of oil in a large pan, and fry the leeks for 4 minutes.
Add the stock and sweet potato, and bring to boil. Cover the pan and simmer for about 15 minutes until the sweet potato is soft.
Blend, season to taste, and serve!
